1 2/3 cup water
3 tablespoons oil
1 teaspoon apple cider vinegar
2 cups white rice flour
2/3 cup potato starch
1/3 cup tapioca flour
2 1/2 teaspoons xanthan gum
1 1/2 teaspoons salt
3 tablespoons sugar
(optional: 2 teaspoons cinnamon, 1/2 cup raisins)
2 1/4 teaspoons (1 packet) yeast.
I believe when we made it in her bread machine, we put the wet
in first, then the dry. We did one mixing cycle, and one rising cycle.
Then we baked it for one cycle. You could also add 1-2 teaspoons
powder to make this hold together better. Use medium or large eggs --
much bigger, and the bread will be rubbery.
