Chocolate Cake W/ PB Frosting

2cups white sugar
1 3/4 cups white rice flour
3/4 cup Cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup of milk substitute (I used rice milk)
1/2 cup oil (I used olive)
2 tsp GF vanilla
1 cup boiling water

Heat oven to 350 degrees. Coat a 9x13 cake pan w/ olive oil, then dust w/ rice flour. Combine dry ingredients in large bowl. Add eggs, milk, oil and vanilla. Beat on med speed 2 minutes. Stir in boiling water (batter will be thin) Pour into pan, bake about 40 minutes.

3 1/2 cups confectioners sugar
1/2 cup peanut butter
2/3 cup cocoa
1 1/2 cup milk substitute
1 tsp vanilla

Beat all ingredients, adding milk substitute as necessary.
