Poha Waffles

1/2 cup brown rice flour
1/2 cup poha OR quinoa flakes
1 TBS honey
1 tsp. baking soda
1/2 tsp. salt
3 TBS oil
1/2 cup milk (or substitute)
1 large egg
1 ripe banana (or 3/4 cup applesauce, pumpkin, grated vegetables, etc. (use your imagination)
1 tsp cider vinegar (optional)
If desired, may also add flaxseed, sunflower or sesame seed, chopped dried fruit, or nuts.

Mix dry ingredients. Separate egg yolk from egg white & beat egg white to stiff peaks. Set aside. Mix egg yolk, honey, oil, milk, & wet fruit. Add dry ingredients to this mixture & fold in egg white. For extra fluffy waffles, add 1 tsp. cider vinegar & mix gently. Pour 1/3-1/2 cup mixture into waffle iron. If desired, freeze extras in ziplock bags & reheat in toaster or microwave.
